Our Fail-Safe Vegetarian Favourites

The occupational hazard of being a PA? Always being the one that organises everything. Cooking, entertainment, travel, you name it and we’ve made a spreadsheet for it. As a PA, recommendations are sacred as they come tried and tested by someone we trust, so in our blog we’re aiming to share as many useful recommendations as we can to help you out both at work and in your personal life. So far, we’ve shared our favourite Time Saving Suppers, Spring Fashion Choices and most useful Apps for Admins. This time we’re looking at what to cook when you have people around and one of them is a veggie. These options are ideal crowd pleasers; none are too complicated to cook or contain obscure ingredients and you can be sure we’ve cooked, tasted and enjoyed every single one!

Like a hug on a plate, if you’re looking for vegetarian comfort food to feed a crowd this quiche is perfect. It’s cheesy, tasty and feels delightfully indulgent.

Loaded Mexican Style Sweet Potatoes

This is a pile it high and don’t worry about your manners kind of vegetarian recipe. Crispy sweet potato skins stuffed with mashed sweet potato, black beans, cherry tomatoes, chipotle, miso and coriander, topped with a dollop of tahini coconut yoghurt and homemade guacamole. Heaven.

Stir fries are great if you’re looking for a quick meal that requires little prep. Just double (or triple) the quantities depending on how many people you have over. Also, make extra of the sauce, it’s so good!

Sweet Potato and Black Bean Tortilla Bowls

This is a vegetarian favourite of our marketing manager Lottie, serve it in big, heaty bowls and let everyone top their own with toasted tortilla and avocado. A poached egg and a bit of hot sauce really takes it up a notch.

Vegetable Paella If you’ve got more than one dietary requirement around the table, this is the meal for you. It’s vegan, vegetarian, dairy free, gluten free, nut free, and soy free. But we promise it’s not taste free! Don’t be put off by the long list of ingredients, they’re all things you’ll have in your cupboard and combine to ensure the dish is totally delicious.
